At first glance, the crispy chili baby corn ($6) at Inchin's Bamboo Garden (14025 Southwest Freeway, 713-529-2245) looks a lot like Tater Tots®. One taste, however, and you'll know you're eating something else entirely something a whole lot spicier. It's actually whole pieces of baby corn coated in batter, deep-fried to a golden brown and tossed with a red chili Szechuan sauce, scallions, onions and garlic. The result is a hot, crispy, colorful vegetarian dish.
